About this Coffee

A nod to the old Madras coffee house tradition — pure filter coffee, no chicory, roasted and ground to recreate the style once served in the legendary "Degree Coffee" cafés of Madras (now Chennai).

The Kumbakonam Degree Coffee tradition demands pure coffee brewed through a fine filter and mixed with freshly boiled, full-fat cow milk to an exact ratio. This 400g blend is developed to meet that standard — clean, aromatic decoction that earns the "degree" designation.

How to Brew

South Indian filter: 12g per serve, firm press, boiling water, decoct 12–15 min. For true Kumbakonam Degree: mix decoction 1:2 with freshly boiled full-fat cow milk. No condensed milk. Add sugar to taste.

South Indian Filter — Method

Mix 1 part decoction to 3 parts hot boiled whole milk for a classic South Indian kaapi. Jaggery instead of sugar adds a pleasant molasses note.

I grew up in Chennai in the 1970s when every street corner had a Brahmin coffee house. The Old Madras Blend from Mirras brings that taste back — pure, aromatic, no nonsense. Brew it with freshly boiled full-fat milk at the right ratio and you have a proper degree coffee.
