About this Coffee

Bilona-method cow ghee from our Coorg estate. Made in small batches from A2 cow milk — traditionally churned, not industrially centrifuged. Rich, aromatic, and deeply golden with a characteristic grainy texture that settles on cooling.

Bilona ghee is made the slow way: curd is set from milk, hand-churned to butter, then clarified on low heat. The process retains more of the milk's natural butyric acid and fat-soluble vitamins than commercial ghee.

Add a teaspoon to your morning filter coffee as a Bulletproof-style brew, or use in cooking. Our institutional clients at Taj Hotels specify this ghee for their specialty breakfast service.

Mix 1 part decoction to 3 parts hot boiled whole milk for a classic South Indian kaapi. Jaggery instead of sugar adds a pleasant molasses note.

Bilona ghee — the real thing, not industrial

I have been sourcing bilona ghee for years and the Mirras estate ghee is as good as any I have found — proper grainy texture, deep golden colour, and an aroma that fills the kitchen when you open the jar. I add a teaspoon to my morning filter coffee. Outstanding.
